Blueberry Breakfast Bake 

This is so delicious to serve for breakfast or as a dessert. It's really a yummy bread pudding with blueberries but it PUFFS up when it's done baking. It's so delicious looking. That's why I think it needs to be served hot or at least warm.

Blueberry Breakfast Bake


Ingredients:

5 cups of white rolls or any kind of white bread broken into pieces
1 8 oz. package of cream cheese
2/3 cup sugar
3 eggs
1 teaspoon vanilla extract
1 ½ cups fresh blueberries
½ cups milk

Instructions:

Place the bread pieces into an 8 x 8 inch square glass pan and cover with 1 ½ cups blueberries. In a medium bowl cream the cream cheese and sugar until smooth and fluffy. Add vanilla extract. Add eggs one at a time. Add small amounts of milk at a time and mix well before adding any more milk. Pour over the bread and blueberries. Let stand for 15 to 20 minutes until all of the milk mixture is soaked into the bread.

Bake 350 degrees for 45 minutes or until center of the glass dish is bubbling. Serve warm. Awesome taste.

Serves 6 to 8
