Blueberries and Cream Cheese Frosted Cupcakes

I love blueberry cupcakes and I wanted to frost them but not with just plain frosting. I wanted them to have blueberries in them also. Here's my take on how to make blueberry cream cheese frosting.

You know how I like to use packaged cakes an frostings? Well this is one of those so it's SUPER QUICK!!

I did make a fresh blueberry compote (recipe at bottom) which only takes about 20 minutes and hardly any measuring. 

1 packaged cake mix + ingredients to make the cake
1 can of cream cheese frosting
1 pint of blueberries, fresh or frozen
1/2 cup blueberry compote or canned blueberry pie filling

Prepare the cake mix according to directions and add 1 cup of blueberries to the mix. Bake cupcakes according to directions. Cool.

In a bowl place the cream cheese frosting and swirl in some of the blueberry compote or blueberry pie filling. Don't stir it very much so that there still will be distinctive colors, swirls of white and blue. Frost the cupcakes - my granddaughter helped with these. She loves making the frosting swirl on top of cupcakes by cutting a hole in the corner of a plastic bag, filling it with frosting and then using it like a pastry bag. It WORKS. Anyway, top with a few fresh blueberries and you have a very lovely looking dessert!!

NOTE: If you want to make your own cream cheese frosting I'm sure it would be even more delicious, but these cupcakes disappeared to raves just as I prepared them.

Compote Recipe:

1 cup fresh or frozen blueberries
2 teaspoons of lemon juice
2 tablespoons sugar
1 tablespoon of sugar

Place in pan and cook over medium heat, stirring frquently for 10 minutes. This is extremely flavorful.
