Baked Acorn Squash with Blueberry Compote


I love blueberries. Can you tell? I have lots of blueberry posts ...


1 acorn squash cut in quarters with the seeds removed.

Lay these face down on baking sheet and bake for 35 minutes at 350 degrees.

Make blueberry compote and serve over baked acorn quarters.

Recipe for Blueberry Compote

2 c. blueberries
1/2 c. sugar
1 TBSP cornstarch
1 TBSP lemon juice

Place all ingredients in a pan and cook on medium heat until mixture thickens about 8 minutes. Place a few spoonfuls on each acorn quarter. I put a few fresh blueberries on top and you could also dust with confectioner's sugar. 

Serve warm.

This may be a new tradition for a Thanksgiving side dish. Easy, too, and the best part is that the blueberry compote can be made ahead!!

This may look a little funky but this went down very smoothly, let me tell you. Very smoothly.

 It was like a dessert!
