White Chocolate Bunny Cookies

What can you make with Nilla Vanilla Wafer cookies and vanilla chocolate candy melts? 

Well, just look and see..













White chocolate bunny cookies, that's what!! And, or, some pink chocolate bunny cookies...










White Chocolate Bunny Cookies

Here's the scoop. 

Melt white or pink or any color chocolate melts in the microwave in 30 second intervals, stirring in between. If you have special equipment to melt the candies, by all means use that. 

Nilla vanilla wafers are just right for this. I dipped the wafers in the melted chocolate, let them drip a little and then laid them on waxed paper, covering them with coconut flakes or little decorative jimmies of some kind.

For the head and ears, it's a bit trickier. I drew the head and ears of a bunny on a white piece of paper, the size and shape of the bunny head and ears I wanted. I placed a piece of waxed paper over the drawing so that I could see the drawing through the waxed paper. I put the melted chocolate in a pastry bag and with the tiniest hole I could find with the pastry tips, I squeezed out some of the chocolate melts onto the waxed paper following the pattern of the bunny head I had drawn, making the ears the same way. I made lots of heads at once and then carefully put them in the freezer for about 5 minutes.

After they were hardened a little, I picked them up and dipped the base of the head into the still melted chocolate and attached the bunny head to the cookie that was dipped a few minutes earlier. I added another dollop of melted chocolate onto the place where the bunny head met the body for safety sake. (Don't want them coming apart, now do we?)

After I dipped a tiny marshmallow in the chocolate I stuck it onto the bunny to complete the look. Then I had some decorative circle thingees which I put on top of the marshmallow because the cookies were looking rather colorless, I thought. Anyway, this colored them up somewhat and I've been pretty pleased about the way they came out, although they are not as perfect as the original cookies at Hungry Happenings where the bunny cookies look so darned PERFECT.

Ah, well, it's the doing that counts... it's the process... the fun in the making of something...
