Boston Cream Cupcakes

I made Boston Cream Cupcakes!!

I love Boston Cream Pie (it's really cake). 






I found the recipe on Martha Stewart's site but I made a few changes to make it quicker. :)


YELLOW BOX CAKE MIX 

 I put more batter into each cupcake paper so the cupcakes are nice and big.

Then I cut the a circle out of the top of the cupcake like this:






Vanilla Pudding Mix ... 


Place some of the pudding into each cupcake and top with the little cake circle you cut out like this:









However, I didn't shortcut Martha Stewart's Ganache.

  • 2/3 cup heavy cream
  • 6 ounces semisweet chocolate bits, finely chopped (3/4 c.)
  • 1 tablespoon light corn syrup


Bring cream to a boil in a small saucepan or a bowl in the microwave for 1 minute. Remove from heat, and add chocolate and corn syrup. Let stand for 5 minutes. Whisk until smooth. Transfer to a bowl, and let cool, stirring often. Use immediately.

However, when I made the ganache, it was a bit thin so I added some more (1/4 cup) chocolate bits and it thickened up nicely.
