My Patriotic Jello Dessert

I’ve been having fun with strawberries, blueberries and raspberries for the past month (it’s like a craft to me... only it’s edible.. ha ha) ...blueberry jam made without pectin, blueberry sauce, blueberry and raspberry spritzers...

It’s been a lot of fun!

Here is what I finally came up with...

At a tag sale I found this plastic bag filled with these little jello molds. There were a lot of them for $2.

Here is what I did with some of the little jello molds.

Jello Recipe

2 Strawberry Jello Packages
1 Knox Gelatin envelope

I  like my jello molds to be firm so I will put in 1 less cup water than what is called for.  Each of the 3 packages ( 2 packages of Jello and 1 package of knox gelatin) calls for 2 cups of water, that’s 6 cups altogether, but I will only put in 5 cups of water so the jello will be firm and hold its shape well when it’s unmolded.

The Knox gelatin needs to be softened first in 1/4 cup warm water and left to sit for a few minutes. In the meantime, I boil up 1 cup water and dissolve both Jello packets in it. I add the softened gelatin and 4 cups cold water.

At this point I could have added fruit (looking back on this I think I could have put the raspberries inside the little jello molds). Oh, well, c’est la vie!

Pour into jello molds and refrigerate. Fortunately I have a WHOLE LOT of jello molds now. :)

To take the Jello out of the mold I took a knife dipped in hot water and ran it around the edge between the Jello and the Jello mold.

Once I broke the seal at the top of the jello, I filled a bowl with hot water and then held the jello mold into the hot water up to the top but  being careful not to get any water into the mold itself.

Then I quickly turned it upside down on a plate.

Here is the sweet little star made of Jello. How fun is this?

Now for the embellishment. It’s like crafting. You can take it as far as you want to. I put the berries over and around the star jello with cream, of course.

There was a pretty bird mold. This is how it came out..

This could totally be made by making jello in a large bowl and then scooping the jello onto a plate and “dressing it up” with cream, raspberries and blueberries.

It would STILL be a patriotic dessert! Right?

I did want to show this one other patriotic jello dessert. It uses sweetened, condensed milk and I didn’t try it. It seems like it would be too sweet but I’ll let you guys decide if it’s worth a look.
