Cooking with Parchment Paper

Hi, Everyone,

Recently I read in a magazine about a really interesting recipe for cooking fish with parchment paper. I’ve done that before but I learned something new so I want to share it with you all.

Here is tilapia, a fish I really love.

tilapia

This is what I learned that's new.... using a potato peeler to make thin shavings of asparagus! Aren't they nice little thin curlings to add on top of the tilapia?

I also sliced up some lemons and put some lemons on top of one package of tilapia.

One package I made without the lemon.

Egg whites are brushed around the edge of the parchment paper and acts like a glue to hold the parchment paper together. Here, Michele folds over the parchment paper and presses down on the paper to seal the two pieces of parchment paper together, sealing in the fish.

Bake in a 400 degree oven for 12 1/2 minutes.

Doesn’t this look nice, though?

Have YOU cooked in parchment paper before? If so, what is it that you cooked in it?

Actually, I'm totally thinking about grilling right now, too.

Best wishes for a happy Spring,
