Yummy Irish Soda Bread

This is the most delicious soda bread I have ever tasted and it was EASY to make, too!

Michele, niece, and I and my Mom made a lot of food today. We made the cupcakes for Easter and froze them so all I have to do is put them together the day before Easter (Holy Saturday).

Mix together:
2 1/2 cups of flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 cup raisins

Melt 3/4 stick of butter (or just the whole stick)

add to:
1 cup milk

Add milk and melted butter mixture into the dry ingredients
Mix together.
DONE!

Form 2 round loaves as seen below... bake on a cookie sheet at 350 degrees for about an hour. Check it a lot so that it doesn’t burn. I think we overcooked one loaf.

There must be something wrong with Mom’s oven because the loaf on the left cooked quicker than the one on the right. Weird.

    1. Paula, it's easy and quick although it takes an hour to cook. It's more like a cake because it's sweet. That's why it's tasty. :)

    this with Splenda?

    1. No you don't have to use raisins. i think I'd make it with fewer raisins next time. Does Splenda cook well? I don't use it so I'm not sure. You could "Google" it. :) Thanks for adding to the conversation, Melinda.
