Vintage Recipe for Grape-nut Pudding




 Let’s bring back the hearty, healthy recipes of another age, when food was simpler and purer.
(The food wasn’t genetically engineered like it is now. )

First off, what are grape-nuts? Are they grapes? No. Are they nuts? Nope. According to Wikipedia Grape-Nuts is an unsweetened breakfast cereal that originated in 1897 by C.W. Post. Grape-nuts cereal is made from wheat and barley and has a nutty flavor (hence the “nuts”). The “grape” part of the name came about because C.W. Post thought that grape sugar developed while the product baked. Not so.  Also, the cereal bits look like grape seeds.

So that’s how the name came about. Now how to use them as something other than cereal. It is not a sweet cereal on it’s own but it is extremely crunchy even after being in milk for a while so that is definitely a plus if you want to eat it as cereal. Once it cooks, though, it becomes soft.

To make the Grape-nut Pudding:


Mix together:
2 Eggs
1/2 cup sugar

Stirring

Add and stir:
3 cups of milk
1 cup or a little less of Grape-nuts

Cook in the microwave for 3 minutes and stir after 2 minutes. Continue to microwave for another minute or two until the grape-nuts come up around the side and it becomes custardy.

The more milk you add the more custardy it is. We like lots of Grape-nuts in our pudding so we put in extra.

We put Cool Whip on the top but you could use cream or ice cream. Yummy.

If you want it to look extra special you could add some Girl Scout mint cookies on top of the Cool Whip.
