Mom's Thanksgiving Mincemeat Squares





Here is Mom making the Mincemeat Squares she has made for eons. She is 101 years old and doing fine, even after a hip replacement surgery this spring.

Recipe for Mincemeat Squares:

1 box of Nonesuch Mincemeat (hard to find in grocery store)
2 boxes of Jiffy Pie crust Mix
1/3 cup sugar
3 cups of water (can be more or less)

Put Nonesuch mincemeat in medium sized pan and add sugar and 3 cups of water (could be a little more or a little less-just so that it is a little juicey). Bring to boil and simmer for a few minutes until everything is plumped up. This is the mincemeat mixture.

Prepare pie crust by directions on package. Roll thin into a rectangle to fit a cookie pan with a 1 inch lip. Fit into cookie pan and up sides. Pour mincemeat mixture onto the pie crust - not too thick, just enough to cover the pie crust. Roll another thin rectangle of pie crust to put on top of the mincemeat mixture. Brush the top with milk. Bake at 425 degrees for 10 or 12 minutes. It is done when it is slightly browned on top like a pie. Cut into squares immediately and put on racks to dry.
