Luscious Lemon Curd Bars

Lemon Curd Bars

Michele (niece) and I made these for Easter!







Ingredients:

1 cup butter/margarine softened
1 cup sugar
3 c. flour
1/2 tsp baking soda
jar of lemon curd
1/2 cup chopped/slivered almonds
1/2 tsp salt



Directions:                                       350 degree oven

Cream butter and sugar.

Add flour, salt and baking soda. Chop flour into creamed butter  until mixture forms small balls like making a pie crust.

Put 3/4 of the mixture into an 8 x 8 square pan (I used a glass pan). Pat it down. 

Bake about 12 minutes and cool slightly.

Spread lemon curd generously over the flour mixture. 

Add almonds to the remaining flour mixture and pour over lemon curd.

Bake another 6 to 8 minutes until top gets slightly browned.

Grate lemon rind and spread over the top of the bars.

Cut into squares.
