This is such an amazingly fabulous, healthy bread!

Blueberries and Zucchini Bread  


3 eggs
1/2 cup vegetable oil
1/2 cup applesauce (no sugar added)
2 teaspoons vanilla extract
1 1/2 c. white sugar

2 cups shredded zucchini (let shredded zucchini sit for about 15 minutes and then squeeze out any extra fluid before added to recipe)

3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons ground cinnamon
2 pints blueberries (you could certainly use 1 pint of blueberries but I like LOTS of blueberries) The blueberries need to be shaken in a bag with a few tablespoons of flour before adding them to the batter. This keeps them from all sinking to the bottom. Although it looks like they went to the bottom anyway. Phwatt... )


Preheat oven to 350 degrees - Makes 2 large loaves or 4 mini loaves

Beat together the eggs, oil, applesauce, vanilla, and sugar. Fold in the zucchini. Mix in the flour, salt, baking powder, baking soda, and cinnamon. Fold in the blueberries. Pour into loaf pas.

Bake 50 minutes in the preheated oven. Cool. Enjoy!!

There is one problem with this - it's TOO good so I want to keep eating it.
