Blueberry Lemon Spritzer with Homemade Blueberry Syrup

Cool, refreshing, sparkling, thirst quenching ...

It has been so hot here in Connecticut. Today was a relief from the heat, but a few days ago I was looking for an effervescent drink to quench my thirst. Coke was really mouth watering but it’s so full of empty calories ...

This did the trick.

I bought a bottle of seltzer water and I had some blueberries and lemons and put them together. I also made a blueberry syrup so I could get some flavor in the seltzer and also some sweetening.

1 pint blueberries
4 cups water
1/3 or 1/2 cup sugar or honey (I don’t even put that much sugar in – I don’t like things super sweet). If you like it sweeter, go for it.

Simmer for 10 minutes. ENJOY!

I also made some popsicles with this stuff. Perfect coolers..

I poured seltzer water in a glass, added some blueberries, ice, and a little of the blueberry syrup – 2 tablespoons or so. Squeeze in some lemon.

It looks so pretty, doesn’t it? It tastes wonderful AND it’s thirst quenching.

Then the lemon fell in.. and this happened...

    2. I buy canned club soda instead of seltzer for these drinks. That way I can use what I need without a large amount going flat.
