  Blueberry Cheesecake Twinkies Shortcake

Oh, yes, this was so yummy! Unbelievably yummy!!

And fun. Working with Twinkies makes me giggle.





This is how this recipe happened. Initially, I decided to use Twinkies to make a tiramisu dessert but then I started looking on Pinterest to see if there might be other ideas for Twinkies and I found a beautiful strawberry cheesecake shortcake made with Twinkies. 

Since I love blueberries I decided I would make a blueberry shortcake instead. Here are the results of that....




It's basically a matter of layering to make this delicious dessert.  First, I made the blueberry compote from my recipe HERE


RECIPE FOR BLUEBERRY TWINKIES CHEESECAKE SHORTCAKE

This makes a 9x9 inch pan of this dessert.

1 small container of Cool Whip
1 pint of blueberries for the blueberry compote - also 1 TBSP lemon juice, 1/4 c. sugar/honey
cheesecake filling - you can make your own or, like me, buy the cheesecake mix
10 Twinkies, cut lengthwise

Layer the Twinkies that are cut lengthwise on the bottom of an 8 x 8 inch square glass pan
Prepare the cheesecake filling and lay on top of Twinkies
Cool the compote - you could use blueberry pie filling, if you like
Spread blueberry compote on top of the cheesecake filling
Top with generous amount of Cool Whip

  8. Oh yum.. I had to try this since I am a blueberry lover as well. I prefer real whipped cream.. so I top each square with Reddi-wip after it is on the plate. Only problem is I can never eat just one.
