Strawberry Jello Cake

This jello cake is so light and refreshing for summer. We love it. It just happens to pull together very easily also. Since there are plenty of strawberries and blueberries around now, it's the perfect dessert.



Easy Recipe:

Ingredients:

1/2 pkg angel food cake mix
1 large pkg strawberry gelatin
2 cups strawberries, sliced
1/2 cup blueberries, more, if desired
To make the cake:

Follow directions on the box for the angel food cake but with 1/2 the water recommended. Pour into non-greased 8x8 inch pan and cook in 350 degree oven for 20 to 25 minutes, or until done. Set aside to cool.

To make Jello:

Soften gelatin in 1 cup hot water. Pour into a bowl, add 2 cups cold water and stir.  Put bowl in freezer for 15 or 20 minutes until gelatin starts to set up.

Put strawberries and blueberries on top of cooled cake. Pour the gelatin over the berries. Put in refrigerator for 2 or 3 hours.

Serve with cream or yogurt.
