Whole Cranberry Sauce Coffee Cake

 Michelle, my niece, came up with this very wonderful recipe for coffee cake using whole cranberry sauce as a filling for coffee cake. It's really easy to make and basically you layer the coffee cake batter with the whole cranberry sauce.

This would make a great food gift for a family, don't you think?





Whole Cranberry Sauce Coffee Cake

Ingredients:

For the cake:

3/4 cup softened butter
1 1/2 cups sugar (I reduced this somewhat since the cranberry sauce is also sweet)
3 eggs
1 1/2 teaspoon vanilla extract
3 cups flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sour cream
1 can whole berry cranberry sauce (I only used about 2/3 of a can)
OPTIONAL: 1/2 cup chopped pecans

For the icing. Cream together and drizzle over cooled cake.

3/4 cup confectioner's sugar
4 1/2 teaspoons water
1/2 teaspoon almond extract (I used vanilla)



Directions:

In a large bowl cream the butter, sugar, eggs, vanilla extract.

In a separate bowl combine flour, baking powder, baking soda, and salt. Add to the creamed mixture alternating with the sour cream.

Butter and flour the inside of a bundt pan.

Evenly spread 1/3 of the cake batter into the bundt pan. Then spread 1/3 of the whole cranberry sauce over the batter. Repeat until all ingredients are used up.

Bake at 350 degrees for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.

Cool. Drizzle with icing.


This would make a great gift at the holidays, I believe. I'd like it if someone gave one to me! LOL
