Amazing Taco Pie for Cinco de Mayo

What is Cinco de Mayo? 

Cinco de Mayo means "fifth of May". (Should I add here that it's my birthday, too?) Anyway, according to Wikipedia, it is a Mexican holiday celebrating their victory over the French in Puebla, Mexico.  The French Army was much bigger than the Mexican's but the Mexicans won and it was a majorly happy and encouraging event for them. However, it was short lived and the French regrouped and went on to take Mexico city. But May 5th is still remembered for a victory against overwhelming odds. 

That said, this day is celebrated more in the U.S. than in Mexico where Mexican food is served as part of the celebration.

Here is my take on a Mexican dish.

Easy and Quick Taco Pie


Easy and Quick Taco Pie

Ingredients:

1 lb. ground beef (or turkey)
1 onion (chopped)
1 can green chiles (optional)
½ envelope taco seasoning
½ cup Bisquick
1 cup milk
2 eggs
can of chopped tomatoes (or a real tomato, chopped)
1 cup shredded Mexican style cheese

Directions:

Cook the onion until slightly transparent in color and add ground beef - When these are cooked, pour in ½ of the taco seasoning (you can add the whole packet if you like yours stronger) and mix together. Pour into a greased pie pan - I used a deep dish pie plate for mine.

Top with canned chiles.

Mix Bisquick, eggs, and milk together and pour over the ground beef and onion mixture.

Bake at 400 degrees for 25 minutes. Remove from oven, top with can of drained chopped tomatoes and shredded cheese. Bake another 8 to 10 minutes.

This is a stick-to-your-ribs kind of meal... a man-pleaser!
