Chicken Pasta Skillet Dinner


Chicken Skillet Pasta Dinner








Ingredients:

skinless, boneless chicken breasts (slightly pounded)

2 cups fresh spinach

4 slices crispy bacon

8 or 10 cherry tomatoes

shredded mozzarella

cooked spaghetti

salt, pepper, Italian spices to taste

grated Parmesan cheese


(You can also add a prepared spaghetti sauce if you want.)


Instructions:

Brown chicken breasts in a little olive oil in a skillet until both sides are browned. 

Remove the browned chicken and set aside.

Cook tomatoes and spinach in the same skillet with the chicken juices for 5 minutes.

Take out the veggies.

Add back in the chicken (salt and pepper and any spices) and simmer until chicken is done (a small amount of chicken broth may be needed at this point to keep things from burning). Add back in the spinach and tomatoes.

Add shredded mozzarella and cover until melted.

Serve on top of spaghetti. Top with Parmesan cheese and crumbled bacon.
