Grilling Chicken with Homemade Barbecue Sauce

It’s Wednesday again and I’m grilling chicken. Since the hubs is on a Mediterranean diet (as per doctor’s orders) I’m trying to make delicious meals for him with lots of low fat proteins and fresh vegetables. Grilled chicken is extra tasty.

I love making my own barbecue sauce because it’s fun and easy. I used equal parts apricot preserves and ketchup (sometimes I just eyeball it) – and add salt and pepper. That’s all there is to it and the chicken had GREAT taste. Then grilling gives the chicken an additional smoky taste, too.

I added cucumbers also because the Mediterranean diet has lots of fresh vegetables and fruits in it.

Dill Potatoes and Tomatoes

3 pounds small red potatoes, cut in half
3 or 4 nice sized tomatoes, cut into wedges
1/2 to 1 teaspoon dried dill
A sprinkling of olive oil and vinegar
Boil potatoes in saucepan until tender.
Drain.
Add tomatoes, dill, oil, vinegar, salt, and pepper
Gently mix together and cover for 10 minutes until the tomatoes are a little soft.

This is really, really tasty.
