Comfort Food on a Cold Day - Mac and Cheese

This is my sister’s Mac and Cheese and it is SUPERB but she does things a little differently from other Macaroni and Cheese recipes -  along with having 2 unusual ingredients, onion and tomatoes she also cooks the macaroni right in the milk which is the really unusual thing about her recipe. There is a whole step that is skipped – boiling the macaroni in water -  so her recipe is really quick and easy to make. I hope you like it. She gets rave reviews for this.

The Recipe:

Melt 1/4 cup butter in saucepan and saute 1 onion (chopped) until transparent.

Stir in 1/8 cup flour and 1 tsp. salt and stir for 1 minute. Add 3 cups of milk. Simmer.

Add 8 oz of uncooked macaroni.

Simmer for 8 minutes. It will thicken as it cooks.

Slice  1  1/2 cups sharp cheddar cheese thinly.

Remove macaroni mixture from heat. Add cheese. Stir until cheese is melted.

Add drained, medium sized can of diced tomatoes (not the small can).

Stir:

Turn into a casserole dish if desired and you could also top with either cubes of bread and/or more cheese and bake a few minutes until cheese is melted and bread is crunchy.

  3. Yummy. I love tomatoes and all types of Italian food which has a lot of tomato and cheese combos. This makes perfect sense. Love it!
